During a hot summer day or even if it isn’t summer, but the day is more warm than cool, usually during mid-morning or late in the afternoon, wouldn’t it be nice to have something refreshing and delightful?
Imagine biting into a cold ball of sweet, fruity and nutty goodness or even popping the whole thing in your mouth. I like doing that. Then I’ll close my eyes, chew slowly while allowing the ball to melt in my mouth. With eyes closed I play a game of guessing what fruit or nut is the source of varied tastes and textures my tongue encounters. Of course the game ends when I have munched on the last bits and swallowed everything. I then open my eyes and for reason unknown I break into a wide smile, quite pleased with myself and the experience. That is truly heavenly bliss.
Definitely a good example of such source of bliss is our featured recipe “Almond Coconut Cacao Bliss Balls”.
For fruitiness there are sweet and a bit tangy apricots, a bit bitter cranberries and very sweet dates. Imagine yellow-orange apricots, red cranberries, deep red almost brown dates. Imagine the color and tastes when blended. For nuttiness there’s really nutty almond meal, chocolaty cacao powder, and meaty coconut. Add some orange juice for better binding, then roll the formed balls in coconut.

Freeze the bliss balls. When the balls are ready and you feel like some cooling down, and a relaxing journey into a world of pure imagination, as Willy Wonka said, pop an Almond Coconut Cacao Bliss Ball into your mouth.
Almond Coconut Cacao Bliss Balls
Ingredients
- 1 cup of almond meal
- 1 cup of desiccated coconut
- 1 cup of pitted dates soaked in water
- 1/4 cup of cacao powder
- 1/4 cup of dried apricots
- Small handful of cranberries
- Juice of half an orange.
Instructions
- Blend the apricots, cranberries and dates in a blender and then mix in the almond meal and coconut.
- Add enough orange juice to moisten the mixture but not too much to make it runny.
- Roll the mixture into small balls (about the size of pingpong balls) and roll in coconut.
- Put them in the freezer and serve frozen.
I swap the above recipe around depending on what fruit I have available, i.e. Sometimes I use sultanas, frozen raspberries, goji berries etc…
