Miso Roasted Butter Bean Nourish Bowl

Ingredients

  • 2 cups cooked quinoa

Miso roasted butter beans

  • 1 can of butter beans
  • 2 tbsp tahini
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tsp sea salt
  • 1 tsp miso
  • 1 tbsp zaatar

Cucumber salad

  • 4 small cucumbers thinly sliced
  • 1 small bunch dill chopped
  • 1/2 cup coconut Greek yogurt
  • 1/2 tsp chilli flakes
  • Ssalt season
  • 1 tsp lemon zest and squeeze of lemon
  • Olives capers and olive oil to garnish

Avocado strawberry salsa

  • 1 riped avocado chopped
  • 1 cup strawberries chopped
  • 1/2 lemon – zest and juice
  • Salt to taste

Instructions

  • Miso roasted butter beans: Mix everything and roast on an oven tray at 200C for 15 minutes or more if you like the beans extra crunchy

Cucumber Salad: Mix everything until cucumbers are well coated with yogurt.

  • Avocado strawberry salsa: Mix everything
  • Layer cooked quinoa, roasted beans, cucumber salad and avocado strawberry salsa.
