Double Choc Blended Overnight Oats

Ingredients

Chocolate Blended Oats

  • 2 cups 500 ml almond milk, or plant-based milk of choice
  • 1 ¾ cups 210gm rolled oats
  • 2 tbsp 20gm chia seeds
  • ¼ cup 20gm cacao powder
  • ¼ cup 75ml maple syrup, or to taste
  • 1 tsp vanilla extract
  • 1 small pinch salt

Chocolate Topping

  • 4 tbsp dark chocolate chips

Instructions

  • Combine all Chocolate Blended Oats ingredients in a high-powered blender. Blend for 1 minute or until mostly smooth. The mixture will be quite runny at first which is fine. It will firm up in the fridge as the oats and chia seeds absorb the liquid.
  • Divide the chocolate blended oats between 4 individual jars or containers.
  • Seal the jars and chill, in the fridge or for at least two hours or preferably overnight. They will keep for 4-5 days depending on the climate. Warmer room temperature will be more like 4 days.
  • Top with dark chocolate chips and enjoy!

Notes

  1. Add a scoop of protein powder for an extra boost.
  2. Switch cacao for peanut butter if you prefer a nutty flavour.
  3. Use strawberries or blueberries for the chia jam if raspberries aren’t your thing.
  4. For a creamier texture, add a splash of coconut milk when blending.
  5. Mix in some nuts or seeds for crunch right before eating.
