They’re packed with the bright zing of lemon and the smooth nuttiness of cashews and are the perfect bite-sized treat to give you a boost during your day. Great for pre-workout snack or a mid-afternoon pick-me-up, these little golden balls keep me fuelled without weighing me down. So indulgent and wholesome. 

I make a big batch for meal prep and store them in the freezer. You can eat them straight from the freezer no thawing required.

No-Bake Lemon Cashew Energy Balls

The ultimate tangy zesty treat made with cashews and 4 other simple ingredients. No baking required.

Ingredients

  • 1.5 cups 150g cashews
  • 1.5 cup 100g desiccated coconut
  • 3 tbs Zest & juice of one large lemon
  • 3-4 tbsp maple syrup to taste
  • 1 tbsp melted coconut oil

Instructions

  • Add everything to a food processor and blend until fully combined and smooth. It may take a couple of minutes until really soft and sticky and the cashews have broken down.
  • Place one tablespoon of the mixture on the palm of you’re hand. Roll into balls.
  • Coat the energy ball with more desiccated coconut.
  • Put them in the fridge for 30 minutes
  • These will keep for about a week in a sealed tub in the fridge

Notes

1. Sub cashews for almonds, walnuts or oat flour for a different flavour.
2. Mix in a scoop of favourite plant-based protein powder for an extra boost.
3. Use coarse shredded coconut for coating for added texture.
4. You can add a handful of cacao nibs for a chocolate twist.
5. Adjust the lemon zest amount for an extra citrusy punch.
6. Keep them in the fridge for up to a week or freeze for longer freshness.
