Cookie Dough Overnight Oats

Ingredients

Blended Oats

  • 1/3 cup rolled oats
  • 3/4 cup milk I use soy
  • 2 tbsp vanilla protein powder plant-based refer notes*
  • 1/2 tbsp cashew or almond butter
  • 1/2 tbsp white chia seeds
  • 1/2 tbsp maple syrup
  • 1/2 tsp vanilla
  • tiny pinch of salt

Topping

  • 1 tbsp dark chocolate chips

Instructions

  • Combine all blended oats ingredients in a high-powered blender and blend for 30-60 seconds or until almost smooth and has thick consistency.
  • Transfer to a jar or container. Top with chocolate chips and refrigerate for at least 2 hours or overnight to firm up.
  • Can keep in the fridge for 3-4 days in airtight container.

Notes

  1. Add a tablespoon of cocoa powder for chocolate lovers.
  2. Swap almond butter for peanut butter or cashew butter.
  3. Toss in chopped nuts or seeds before serving.
  4. Mix in berries or banana slices for extra sweetness.
  5. Swap protein powder for extra rolled oats if preferred.
  6. Use other plant-based milk like almond or oat milk.
