Pistachio Cranberry Energy Balls

Ingredients

  • ½ cup Pistachios
  • ½ cup Pumpkin seeds aka pepitas
  • ½ cup Shredded coconut
  • 1/4 cup Cranberries
  • 2 tsp Matcha powder
  • 1 cup Pitted dates
  • ½ cup Shredded coconut
  • 2 tbsp Maple syrup

Instructions

  • Place all ingredients into a food processor and blend well into a thick doughy consistency.
  • Check that the mixture is moist but not sticky. Add extra dates if it’s too dry, coconut if too wet.
  • Using moist hands roll sought into balls around 1 heaped tablespoon each in size.
  • Store in an air tight container in the fridge (up to 5 days) or freezer (up to 3 months).
