Easy Chocolate Cookie Baked Oatmeal

Ingredients

  • ½ cup rolled oats
  • 1 chia egg 1 tbsp chia seeds soaked 3 tbsp water
  • ¼ cup almond milk or milk of choice
  • pinch of sea salt
  • ¼ tsp baking powder
  • 1 tbsp cocoa powder
  • 3 tbsp dark chocolate chips
  • 1-2 tsp pure maple syrup

Instructions

  • Blend all your ingredients (except chocolate chips) until well combined.
  • Pour mixture into a greased oven-safe dish.
  • Add dark chocolate chips on top.
  • Bake at 180C/350F for 20 minutes or until a toothpick comes out clean.
  • Enjoy!

Notes

  1. Throw in some nuts for extra texture.
  2. Swap maple syrup with sweetener of choice.
  3. Use certified gluten-free oats for gluten free option.
