Blended Caramel Oats

Ingredients

  • 2 cups rolled oats
  • 1 cup almond milk or any other plant based milk
  • 2 tbsp peanut butter
  • 2 tbsp maple syrup
  • 2 tbsp date caramel
  • 3 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • Topping
  • 4 tbsp date caramel see notes for recipe
  • 100 g dark chocolate melted

Instructions

  • Add all blended oats ingredients to a high-power blender. Blend until the mixture forms a thick, batter-like consistency.
  • Divide the blended oats mixture into individual jars or bowls and smooth the top with the back of a spoon.
  • Top the oats with date caramel and melted dark chocolate. Cover and refrigerate for at least 2 hours or until set. When you’re ready to eat, smash into the top and enjoy! They will keep for up to 3 days in the refrigerator.

Notes

  1. Swap regular oats for gluten-free if needed.
  2. Add 2 tablespoons protein powder for extra protein.
  3. Sub Peanut butter with almond butter or other nut butter.
  4. You can omit caramel, the oats with chocolate shell amazing as well.
