Choc-Covered Pumpkin Spice Treats

Ingredients

Yogurt Bites

  • 1 cup Thick coconut yogurt choose a THICK yogurt NOT Runny yogurt
  • 5 tbsp Protein powder vanilla or salted caramel
  • 1/4 cup Pumpkin puree I used homemade puree for a fresher taste
  • 1/3 cup Nut butter cashew or almond or peanut
  • 3-4 tbsp Maple syrup
  • 1 tsp Vanilla extract
  • 1 tsp Pumpkin spice
  • Pinch of sea salt
  • 1/4 cup Finely chopped dates
  • 1/4 cup Chopped walnuts

Chocolate Coating

  • 1 cup Chocolate chips or chocolate bars broken into pieces or white chocolate
  • 1 tsp Coconut oil for a thin chocolate consistency

Instructions

  • In a bowl, mix all the yogurt bite ingredients until well combined. Adjust sweetness to your taste.
  • Spoon the mixture onto a lined baking sheet and shape into discs with the back of a spoon. Place in the freezer for 2-3 hours until completely solid.
  • Melt the chocolate and coconut oil to a medium bowl. Use the double boiler method or heat in in the microwave stirring well every 30 until melted.
  • Quickly dip each yogurt bite and place back on the lined baking sheet. Place back in the freezer for an hour or so.
  • Enjoy them straight from the freezer for a firmer ice cream like consistency or let them thaw a few minutes for a creamier texture.

Notes

  1. Try dark chocolate, white chocolate, or even cinnamon-dusted coconut flakes for a unique flavour.
  2. Mix in chopped nuts or granola for a fun texture contrast.
  3. Canned pumpkin puree works well, but homemade puree gives a fresher taste.
  4. Use coconut, almond or high protein yogurt or for a creamy treat.
  5. Use any sweetener of choice.
  6. Use a mini muffin pan or silicone moulds for bite-sized portions that are easy to pop in the freezer
  7. Storing yogurt bites: For creamy yogurt textures, store them in an air-tight container in the fridge. Store them in an air-tight container in the freezer to make them last longer.
