5tbspProtein powdervanilla or salted caramel
1/4cupPumpkin pureeI used homemade puree for a fresher taste
1/3cupNut buttercashew or almond or peanut
3-4tbspMaple syrup
1tspVanilla extract
1tspPumpkin spice
Pinch of sea salt
1/4cupFinely chopped dates
1/4cupChopped walnuts
Chocolate Coating
1cupChocolate chips or chocolate bars broken into pieces or white chocolate
1tspCoconut oilfor a thin chocolate consistency
Instructions
In a bowl, mix all the yogurt bite ingredients until well combined. Adjust sweetness to your taste.
Spoon the mixture onto a lined baking sheet and shape into discs with the back of a spoon. Place in the freezer for 2-3 hours until completely solid.
Melt the chocolate and coconut oil to a medium bowl. Use the double boiler method or heat in in the microwave stirring well every 30 until melted.
Quickly dip each yogurt bite and place back on the lined baking sheet. Place back in the freezer for an hour or so.
Enjoy them straight from the freezer for a firmer ice cream like consistency or let them thaw a few minutes for a creamier texture.

Notes
Try dark chocolate, white chocolate, or even cinnamon-dusted coconut flakes for a unique flavour.
Mix in chopped nuts or granola for a fun texture contrast.
Canned pumpkin puree works well, but homemade puree gives a fresher taste.
Use coconut, almond or high protein yogurt or for a creamy treat.
Use any sweetener of choice.
Use a mini muffin pan or silicone moulds for bite-sized portions that are easy to pop in the freezer
