Green Beans with Mediterranean Sauce
Ingredients
- 500 gm green beans topped and tailed
- Pinch of soda bicarbonate
- SAUCE
- 1 Onion
- 1 Red capsicum
- 1 Pod garlic
- 1 Punnet cherry tomatoes 200gm
- Italian herbs
- 1/4 cup Fresh basil leaves
- Salt and pepper to taste
- EVOO to drizzle
- Lime juice to finish
- 1/4 cup Toasted almonds to garnish
Instructions
Mediterranean Sauce
- Place all veggies in a baking dish.
- Sprinkled salt , pepper , Italian herbs.
- Drizzle olive oil and bake for 20-30 minutes or until cooked.
- Add basil leave and blend to a a chunky or fine consistency.
- Pour over balanced beans.
- Sprinkle toasted almond flakes.
- A bit of lemon squeeze and basil leaves for extra freshness.
Blanched Green Beans
- Place beans in a heatproof dish.
- Sprinkle a pinch of soda (secret to retain the green colour).
- Pour boiling water, let rest for 5-10 minutes depending if you like them crunchy or softer.
