Green Beans with Mediterranean Sauce

Ingredients

  • 500 gm green beans topped and tailed
  • Pinch of soda bicarbonate
  • SAUCE
  • 1 Onion
  • 1 Red capsicum
  • 1 Pod garlic
  • 1 Punnet cherry tomatoes 200gm
  • Italian herbs
  • 1/4 cup Fresh basil leaves
  • Salt and pepper to taste
  • EVOO to drizzle
  • Lime juice to finish
  • 1/4 cup Toasted almonds to garnish

Instructions

Mediterranean Sauce

  • Place all veggies in a baking dish.
  • Sprinkled salt , pepper , Italian herbs.
  • Drizzle olive oil and bake for 20-30 minutes or until cooked.
  • Add basil leave and blend to a a chunky or fine consistency.
  • Pour over balanced beans.
  • Sprinkle toasted almond flakes.
  • A bit of lemon squeeze and basil leaves for extra freshness.

Blanched Green Beans

  • Place beans in a heatproof dish.
  • Sprinkle a pinch of soda (secret to retain the green colour).
  • Pour boiling water, let rest for 5-10 minutes depending if you like them crunchy or softer.
