Carrot Zucchini Fritters

Ingredients

Fritters

  • 3 small zucchini grated
  • 1 carrot grated
  • 1 fresh red chilli finely chopped
  • 1 cup besan flour
  • 1/2 cup rice flour
  • 1 onion finely sliced
  • 1/4 cup plant-based yogurt
  • 1 teaspoon Baking powder
  • Salt and pepper to taste
  • 1 tsp garam masala
  • Smoked Paprika
  • Oil for frying

Avocado Salsa

  • 1 avocado diced
  • 1 tomato diced
  • 1 onion finely diced
  • 1/2 lime juice
  • Salt and pepper to taste

Instructions

  • Mix all fritters ingredients in a large bowl until well combined. Heat a non-stick pan and add olive oil. With an icecream scoop (or two spoons) portion out the fritters and add to the pan. Press them down with a flat spatula and cook on each side for about 3-5 min.
  • For the salsa, mix everything in a small bowl and serve as a topping on the fritters. You can also serve flatbreads, naan or tortillas with them. Enjoy!
