Carrot Zucchini Fritters

- 3 small zucchini grated
- 1 carrot grated
- 1 fresh red chilli finely chopped
- 1 cup besan flour
- 1/2 cup rice flour
- 1 onion finely sliced
- 1/4 cup plant-based yogurt
- 1 teaspoon Baking powder
- Salt and pepper to taste
- 1 tsp garam masala
- Smoked Paprika
- Oil for frying
Avocado Salsa
- 1 avocado diced
- 1 tomato diced
- 1 onion finely diced
- 1/2 lime juice
- Salt and pepper to taste
Instructions
- Mix all fritters ingredients in a large bowl until well combined. Heat a non-stick pan and add olive oil. With an icecream scoop (or two spoons) portion out the fritters and add to the pan. Press them down with a flat spatula and cook on each side for about 3-5 min.
- For the salsa, mix everything in a small bowl and serve as a topping on the fritters. You can also serve flatbreads, naan or tortillas with them. Enjoy!
