Mix all fritters ingredients in a large bowl until well combined. Heat a non-stick pan and add olive oil. With an icecream scoop (or two spoons) portion out the fritters and add to the pan. Press them down with a flat spatula and cook on each side for about 3-5 min.
For the salsa, mix everything in a small bowl and serve as a topping on the fritters. You can also serve flatbreads, naan or tortillas with them. Enjoy!
