Lemon Cashew Energy Balls
Ingredients
- ½ cup Cashews raw and unsalted
- ½ cup Desiccated coconut
- 1 pc Lemon zest finely grated
- 1 pc Lemon juice from above lemon
- 2 tbsp Rice malt syrup
- 1/4 tsp Turmeric for colour optional
- Desiccated coconut extra for rolling
Instructions
- Add all ingredients into a food processor and pulse until come together.
- Take 2 tbsp of the coconut mixture and roll mixture into bite sized balls.
- Roll balls into more coconut if desired.
- Refrigerate for a few hours.
