Lemon Cashew Energy Balls

Servings 12 pieces

Ingredients

  • ½ cup Cashews raw and unsalted
  • ½ cup Desiccated coconut
  • 1 pc Lemon zest finely grated
  • 1 pc Lemon juice from above lemon
  • 2 tbsp Rice malt syrup
  • 1/4 tsp Turmeric for colour optional
  • Desiccated coconut extra for rolling

Instructions

  • Add all ingredients into a food processor and pulse until come together.
  • Take 2 tbsp of the coconut mixture and roll mixture into bite sized balls.
  • Roll balls into more coconut if desired.
  • Refrigerate for a few hours.
