Lychee Avocado Salad
Ingredients
- 12 fresh lychees peeled and pitted (sub one can of lychees, drained)
- 1 large avocado
- 1 tsp lime zest
- 1 red chilli thinly sliced, optional
- 1 sprig mint leaves thinly sliced
- 2 tbsp extra-virgin olive oil optional
- 3 tablespoons lime juice
- A drizzle of maple syrup
- Sea salt
Instructions
- Add the lychees to a bowl. Scoop out the avocado using a spoon.
- Add the olive oil(if using), lime juice, lime zest, chilli and a pinch of salt. Toss to coat.
- Serve as a side salad with a main dish or on its own.
