Lychee Avocado Salad
Ingredients

fresh lychees
peeled and pitted (sub one can of lychees, drained)

large avocado
1
tsp
lime zest
1
red chilli
thinly sliced, optional
1
sprig mint leaves
thinly sliced
2
tbsp
extra-virgin olive oil
optional
3
tablespoons
lime juice
A drizzle of maple syrup
Sea salt
Instructions
Add the lychees to a bowl. Scoop out the avocado using a spoon.
Add the olive oil(if using), lime juice, lime zest, chilli and a pinch of salt. Toss to coat.
Serve as a side salad with a main dish or on its own.
