Miso Roasted Butter Bean Nourish Bowl
Ingredients
- 2 cups cooked quinoa
Miso roasted butter beans
- 1 can of butter beans
- 2 tbsp tahini
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tsp sea salt
- 1 tsp miso
- 1 tbsp zaatar
Cucumber salad
- 4 small cucumbers thinly sliced
- 1 small bunch dill chopped
- 1/2 cup coconut Greek yogurt
- 1/2 tsp chilli flakes
- Ssalt season
- 1 tsp lemon zest and squeeze of lemon
- Olives capers and olive oil to garnish
Avocado strawberry salsa
- 1 riped avocado chopped
- 1 cup strawberries chopped
- 1/2 lemon – zest and juice
- Salt to taste
Instructions
- Miso roasted butter beans: Mix everything and roast on an oven tray at 200C for 15 minutes or more if you like the beans extra crunchy
Cucumber Salad: Mix everything until cucumbers are well coated with yogurt.
