Miso roasted butter beans

can of butter beans

Cucumber salad

small cucumbers
thinly sliced

small bunch dill

coconut Greek yogurt

lemon zest and squeeze of lemon
Olives
capers and olive oil to garnish
Avocado strawberry salsa

riped avocado
chopped

cup
strawberries
chopped

lemon - zest and juice
Salt to taste
Instructions
Miso roasted butter beans: Mix everything and roast on an oven tray at 200C for 15 minutes or more if you like the beans extra crunchy
Cucumber Salad: Mix everything until cucumbers are well coated with yogurt.
Avocado strawberry salsa: Mix everything
Layer cooked quinoa, roasted beans, cucumber salad and avocado strawberry salsa.
