Dipping my breakfast spoon slowly and carefully into the fluffy, light, yet oh so creamy dairy-free parfait, I have a light bulb moment as to the name of this delicious creation. Deriving from the French word ‘parfait’ meaning ‘perfect’, this dish really is!

The playful, cheery pink and purple berries remind me of a stunning morning sky rising over Bondi Beach, and the snow white velvety goodness from the heavenly coconut cream makes for an all round mouth-watering experience!

Pink Chia Pudding Berry Parfait

Simple and easy to assemble breakfast or snack. Sweet enough for people who like sweet breakfast but not too heavy for a first meal to start the day.

Ingredients

  • 5 tbsp chia seeds
  • 400 ml coconut light milk
  • 2 tbsp almond meal
  • ¼ cup puréed raspberries or use 1 tsp beetroot powder
  • 1 tbsp agave

For Layering:

  • 1 cup assorted berries
  • 1 |2 cup vanilla coconut yogurt

Instructions

  • Mix and let set for a minimum of 3 hrs or overnight.
  • Layer in jars starting with chia pudding, then berries and yougurt. Finish with more berries on top.

Chia pudding layered with tropical fruits such as pineapple berries, mango, stone fruits and grapes and a smoothie made with bananas and pear as a base is a winner every time. Just colour it up with rainbow colours of fruits and veggies and see how it brightens your day. The best thing about chia pudding is that you can soak it up before sleep and the delectable and nutritious breakfast is ready for you on your rushed mornings.
