Pink Chia Pudding Berry Parfait
Ingredients
- 5 tbsp chia seeds
- 400 ml coconut light milk
- 2 tbsp almond meal
- ¼ cup puréed raspberries or use 1 tsp beetroot powder
- 1 tbsp agave
For Layering:
- 1 cup assorted berries
- 1 |2 cup vanilla coconut yogurt
Instructions
- Mix and let set for a minimum of 3 hrs or overnight.
- Layer in jars starting with chia pudding, then berries and yougurt. Finish with more berries on top.
Chia pudding layered with tropical fruits such as pineapple berries, mango, stone fruits and grapes and a smoothie made with bananas and pear as a base is a winner every time. Just colour it up with rainbow colours of fruits and veggies and see how it brightens your day.
