Ingredients
- 1 cup Bean medley drained and rinsed
- 1 cup Cooked quinoa
- ¼ cup Dried black currants
- ¼ cup Pitted kalamata olives
- 1 cup Cherry tomatoes
- 1 piece Small red capsicum diced
- 1 piece Orange peeled and diced
- 1 piece Red onion finely chopped
- ¼ cup Fresh parsley chopped
- ¼ cup Roasted cashews optional
Dressing
- ¼ cup Extra-virgin olive oil
- 2 pieces Limes juiced
- 1 tbsp Red wine vinegar
- 2 teaspoons Seeded mustard
- 1 teaspoon Salt
- ½ teaspoon Pepper or to taste
Instructions
- Whisk olive oil, lime juice, wine vinegar, mustard, salt, and cracked pepper together in a small bowl.
- Combine quinoa, tomatoes, beans, capsicum, olives, black currants, onions and parsley in a large bowl.
- Pour dressing over the salad, toss to coat.
