Zesty Quinoa Salad

Ingredients

  • 1 cup Bean medley drained and rinsed
  • 1 cup Cooked quinoa
  • ¼ cup Dried black currants
  • ¼ cup Pitted kalamata olives
  • 1 cup Cherry tomatoes
  • 1 piece Small red capsicum diced
  • 1 piece Orange peeled and diced
  • 1 piece Red onion finely chopped
  • ¼ cup Fresh parsley chopped
  • ¼ cup Roasted cashews optional

Dressing

  • ¼ cup Extra-virgin olive oil
  • 2 pieces Limes juiced
  • 1 tbsp Red wine vinegar
  • 2 teaspoons Seeded mustard
  • 1 teaspoon Salt
  • ½ teaspoon Pepper or to taste

Instructions

  • Whisk olive oil, lime juice, wine vinegar, mustard, salt, and cracked pepper together in a small bowl.
  • Combine quinoa, tomatoes, beans, capsicum, olives, black currants, onions and parsley in a large bowl.
  • Pour dressing over the salad, toss to coat.
  • Serve topped with roasted cashews
