Vegan Nutty Cookie Brittle
Ingredients
- 1/2 cup coconut oil melted but nor hot
- 1/2 cup almond butter
- 1 cup brown sugar
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon salt
- 1 cup spelt flour
- 1 cup oatmeal
- 1 cup chopped cashews or nuts of choice
- 1 flax egg
- ¼ cup Non-dairy milk at room temperature
Instructions
- PREHEAT oven to 180° C
- Line a baking tray with baking paper
- BEAT coconut oil, sugar, vanilla extract, flax egg and salt in large mixer bowl.
- Gradually beat in flour and oatmeal
- Make golf ball size balls
- Press with a flat spoon
- BAKE for 20 to 25 minutes or until golden brown and set.
- Allow to cool and store in airtight container
