Vegan Nutty Cookie Brittle

This cookie is the best of both worlds, dunking in and crunching down. I find them to be such stress relievers and the bonus is they are packed full of nutrients.

Ingredients

  • 1/2 cup coconut oil melted but nor hot
  • 1/2 cup almond butter
  • 1 cup brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 1 cup spelt flour
  • 1 cup oatmeal
  • 1 cup chopped cashews or nuts of choice
  • 1 flax egg
  • ¼ cup Non-dairy milk at room temperature

Instructions

  • PREHEAT oven to 180° C
  • Line a baking tray with baking paper
  • BEAT coconut oil, sugar, vanilla extract, flax egg and salt in large mixer bowl.
  • Gradually beat in flour and oatmeal
  • Make golf ball size balls
  • Press with a flat spoon
  • BAKE for 20 to 25 minutes or until golden brown and set.
  • Allow to cool and store in airtight container
