Pulao is one of the wholesome meals that can be put together with pantry staples and any vegetables on hand. This recipes qualifies for the 30 minutes meal. Enjoy with plain yogurt.

Ingredients
1tspcumin seeds
2tbspolive oil
2red dried chilli
2springs curry leaves
1/4cupchana daal
1medium onionsliced
1tspsalt
1tspcoriander powder
2medium diced tomatoes
1cupricewashed and soaked in 2 cups water
2broccoli heads
Instructions
heat oil in a shallow saucepan on medium heat
add cumin seeds, curry leaves, dried chilli and chana daal, stir until fragrant . Be sure not to burn them.
add onion and salt, sauté until translucent
add coriander powder and stir in tomatoes
cover and cook tomatoes until reduced
add soaked rice with water, stir once and let it it come to boil
cover and simmer (low heat) for 15 minutes until all the water has been soaked in.
serve with steamed or curried vegetable. Plain yogurt goes really well with Pulao
