4tspground flaxseeds soaked in ½ cup water
2cupsmashed sweet potatoes
3 ½cupsflour
2 1/3cupssugar
2/3cupwater
2/3cupoil
2teaspoonsbaking soda
1 1/2teaspoonssalt
1teaspooncinnamon
1/2teaspoonbaking powder
1cupcoarsely chopped pecans
The loaf is yummy on its own but is you wish to enhance the loaf here’s the drizzle glaze recipe:
1/2cupsifted powdered sugar
1tbspcorn flour soaked in 3 tbsp water
2tspcoconut oil
1/8tspcinnamon
1/8tspfreshly grated nutmeg
Instructions
Preheat the oven to 350. Combine the sugar, water, oil, flax seed paste, and sweet potatoes mix good.
Mix all the drizzle recipe and stir together until thoroughly blended and drizzle onto cooled loaf.
