Pistachio Cranberry Energy Balls
Ingredients

Pistachios

cup
Pumpkin seeds aka pepitas
½
cup
Shredded coconut
1/4
cup
Cranberries

tsp
Matcha powder
1
cup
Pitted dates
½
cup
Shredded coconut

tbsp
Maple syrup
Instructions
Place all ingredients into a food processor and blend well into a thick doughy consistency.
Check that the mixture is moist but not sticky. Add extra dates if it’s too dry, coconut if too wet.
Using moist hands roll sought into balls around 1 heaped tablespoon each in size.
Store in an air tight container in the fridge (up to 5 days) or freezer (up to 3 months).
