Easy Fondant Potatoes

Ingredients

Small potatoes
peeled and halved
Avocado oil
or another high heat oil
Salt and pepper to taste

sprigs Rosemary and thyme
Instructions
Place the potatoes in a bowl of cold water and soak for 15 minutes, then pat completely dry.
Heat avocado oil in a stainless steel or non-stick frying pan over medium-high heat. Reduce heat to medium just before adding in the potatoes.
Add in the potatoes, flat side down and sear for 3-5 minutes on one side, until golden brown and crispy. Season with salt.
4 Flip the potatoes over, add rosemary and thyme sear for another 3-5 minutes with a lid on until golden brown and crispy.
