Black Bean Burrito

Ingredients

can Black beans
400g
1/4
cup
Coconut yogurt
2
tsp
Miso paste
Handful chopped parsley
1/2
Lime
juice
1
pc
Medium onion
caramelised in a tsp of EVOO
1
cup
Arugula
rocket leaves
1
pc
Carrot
ribbons made with veg peeler
1
pc
Cucumber
ribbons
1/2
Red capsicum
cut into strips
Hot sauce for dipping
Instructions
Mash black beans in a bowl
Add everything except carrots, arugula , cucumber and capsicum
Mix until we’ll combined
Lay burrito on a board and layer salad and too you with one-third of the bean mix
Wrap and grill on a grill pan brushed with oil
Serve with hot sauce
