A medium tray (metal, plastic or glass) lined with parchment paper
Sharpknife for peeling and slicing mangoes
Ingredients
170ggood quality dark chocolate
1tbspcoconut oil
2large firm mangoes
2tbspcrushed pistachio
Instructions
Step1: Prepare the Mangoes
Wash and peel the mangoes with a sharp knife.
Cut the mango cheeks into thick long wedges, approximately 1/2 inch thick. Ensure the slices are thick enough to hold their shape. If too thin, they may break during the coating process.
Stick a skewer into each wedge.
Place the mango slices on a tray lined with parchment paper.
Put them in the freezer while you prepare the melted chocolate. This will help with the chocolate coating process.
Step2: Melt the Chocolate
Break the chocolate into small pieces and place them along with coconut oil in a heatproof bowl.
Use a double boiler to melt the chocolate while stirring until fully melted. Alternatively, you can melt it in the microwave in 30-second intervals, stirring between each interval until smooth.
Step3: Coat the Mango Wedges
Partially dip each mango slice into the melted chocolate. The longer you dip in melted chocolate, the thicker the coating.
Allow any excess chocolate to drip off before placing the coated slice back onto the parchment-lined tray.
Immediately sprinkle with chopped pistachios or any add-in while the chocolate is still moist.
Repeat the process for all mango wedges.
