Mash together raspberries, chia seeds, rice malt syrup and water until smooth. Be patient with it, the raspberries with eventually melt and become jam-like.
Dollop onto a lined tray and set in the freezer for 3-4 hours.
Coat each jam bite in melted dark chocolate, drizzle any remaining chocolate over the top and set in the freezer for 5 minutes.
Enjoy! Store in the freezer and remove 20 minutes before eating.
