Chocolate Cherry Coconut Bites

Instructions
Cook pitted cherries with 1 tbsp of the maple syrup for 5-7 mins until jammy
Prepare the coconut filling by adding all ingredients to a food processor and process until well combined.
Add cooked cherries and pulse for 10 seconds until well mixed with coconut mixture
Roll 2 tbsp of the mix on the palm of your hand and roll into a log.
Freeze on a lined tray for 2 hours until set.
Dip each bar into melted chocolate while allowing excess chocolate to drip. Store in air tight container in fridge or freezer and enjoy
