Day 29 of 100: Japanese Inspired Cucumber Salad 🥒🥗🥒
This salad has a Japanese-inspired dressing, which has all the properties from nuttiness, crunchiness, and of course the umami flavours.
Ingredients

Persian cucumbers

fresh minced garlic cloves

sugar
optional
Dressing
1
tbsp
Crunch peanut butter
3
tbsp
rice vinegar
3
tbsp
soy sauce or Tamari
1/2
tbsp
sesame oil
1
tsp
sriracha
2
tbsp
toasted white sesame seeds
Instructions
Thinly slice 6 washed and dried Persian cucumbers. (You can also use a mandolin to make it go faster.)
Add thinly sliced cucumbers into a jar with a lid.
Add fresh minced garlic cloves into the jar.
Add peanut butter, rice vinegar, soy sauce or Tamari, sesame oil, sriracha, and sesame seeds into the jar.
Optional: Can add sugar or monkfruit sweetener
Put the lid on and vigorously shake the jar to make sure everything is well incorporated.
Pour the dressed cucumbers onto a serving bowl, top with more white sesame seeds and chili flakes of choice, and enjoy!
