Chickpea Yogurt Toast with Garlic Confit

Ingredients

  • 1/2 tsp lemon rind
  • 1/2 tsp chilli powder or to taste
  • 1/2 lemon juice
  • 1 cup cooked chickpeas
  • 1/4 cup chopped parsley
  • 1/4 cup finely diced red peppers
  • 1 tbsp kalamatta olives chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil

Instructions

  • Mix yogurt, chilli powder, lemon rind and juice in a bowl
  • Combine all chickpea mix ingredients in another bowl.
  • On a sourdough toast, layer garlic confit, lemon yogurt and chickpea mix.
