Chickpea Yogurt Toast with Garlic Confit
Ingredients
- 1/2 tsp lemon rind
- 1/2 tsp chilli powder or to taste
- 1/2 lemon juice
- 1 cup cooked chickpeas
- 1/4 cup chopped parsley
- 1/4 cup finely diced red peppers
- 1 tbsp kalamatta olives chopped
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
Instructions
- Mix yogurt, chilli powder, lemon rind and juice in a bowl
- Combine all chickpea mix ingredients in another bowl.
- On a sourdough toast, layer garlic confit, lemon yogurt and chickpea mix.
