Spicy Vegan Onigiri Recipe

Servings 2 people

Ingredients

1 can chickpeas, drained and washed

    2 tablespoons mayonnaise

      1/2 teaspoon chilli flakes (or hot sauce of choice)

        1/2 cup steamed white (or brown) rice

          2 tablespoons furikake seasoning, divided

            1/2 Persian cucumber, very thinly sliced (either into strips or coins)

              1/2 cup, shredded purple cabbage

                2 full sheets nori

                  Squeeze of lemon

                    salt and pepper to taste

                      Instructions

                      • In a small bowl mash and combine chickpeas, mayonnaise, furikake and chilli. Season with salt and pepper. Mix together.
                      • Place a sheet of nori on a clean surface.
                      • Using scissors (or a knife) make a single cut in the middle of one side, until you get to the middle of the sheet.
                      • In the bottom left corner, spread half the chickpea mixture in an even layer.
                      • On the top left square of nori spread an even layer of 1/4 cup rice (lightly wetting your hands to make it easier to spread. Sprinkle with 1/2 teaspoon furikake.
                      • On the top right square of nori, line half the cucumbers into a thin, even layer.
                      • On the last square of nori add a layer of half the shredded cabbage.
                      • Starting from the spicy chickpeas, fold the square up, then to the right, then down until you have a neat spicy chickpeas “hand roll” square.
                        Onigiri
                      • Repeat with remaining ingredients and enjoy!
