This cucumber salad went viral for a good reason. Aside from one of the easiest salads you can ever make, this is not only nutritious but it’s so flavourful, it makes eating cucumbers so much fun.

This salad has a Japanese-inspired dressing, which has all the properties from nuttiness, crunchiness, and of course the umami flavours. Personally, I’ve always enjoyed eating this dish, I can actually finish the whole dish all by myself! Once you’ve tried this, you will never look at cucumbers the same way again!

Day 29 of 100: Japanese Inspired Cucumber Salad 🥒🥗🥒

This salad has a Japanese-inspired dressing, which has all the properties from nuttiness, crunchiness, and of course the umami flavours.

Ingredients

  • 6 pcs Persian cucumbers
  • 2 pcs fresh minced garlic cloves
  • 2 tsp sugar optional

Dressing

  • 1 tbsp Crunch peanut butter
  • 3 tbsp rice vinegar
  • 3 tbsp soy sauce or Tamari
  • 1/2 tbsp sesame oil
  • 1 tsp sriracha
  • 2 tbsp toasted white sesame seeds

Instructions

  • Thinly slice 6 washed and dried Persian cucumbers. (You can also use a mandolin to make it go faster.)
  • Add thinly sliced cucumbers into a jar with a lid.
  • Add fresh minced garlic cloves into the jar.
  • Add peanut butter, rice vinegar, soy sauce or Tamari, sesame oil, sriracha, and sesame seeds into the jar.
  • Optional: Can add sugar or monkfruit sweetener
  • Put the lid on and vigorously shake the jar to make sure everything is well incorporated.
  • Pour the dressed cucumbers onto a serving bowl, top with more white sesame seeds and chili flakes of choice, and enjoy!
