Asian Cucumber Salad

Ingredients

  • 5-6 pcs Lebanese/Persian cucumbers

For the Sauce

  • 1 tbsp Minced garlic
  • 1 tbsp Gochugaru
  • 1 tbsp Sesame oil or olive oil
  • 2 tbsp Rice vinegar
  • 1 tbsp Soy sauce
  • 1 1/2 tbsp Sesame seeds toasted
  • 1 tbsp Brown sugar

Instructions

  • Lay cucumber in between 2 chopsticks
  • Slice at 45 degree angle
  • Flip the cucumber over
  • Cut at straight angle
  • Place cucumbers in a shallow bowl
  • Mix all the sauce ingredients and pour over sliced cucumbers
  • Mix with chopsticks until cucumbers are well coated
  • Refrigerate for 15 minutes or longer for the sauce to soak in
