Black Bean Burrito
Ingredients
- 1 can Black beans 400g
- 1/4 cup Coconut yogurt
- 2 tsp Miso paste
- Handful chopped parsley
- 1/2 Lime juice
- 1 pc Medium onion caramelised in a tsp of EVOO
- 1 cup Arugula rocket leaves
- 1 pc Carrot ribbons made with veg peeler
- 1 pc Cucumber ribbons
- 1/2 Red capsicum cut into strips
- Hot sauce for dipping
Instructions
- Mash black beans in a bowl
- Add everything except carrots, arugula , cucumber and capsicum
- Mix until we’ll combined
- Lay burrito on a board and layer salad and too you with one-third of the bean mix
- Wrap and grill on a grill pan brushed with oil
- Serve with hot sauce
