Green Goddess Butter Beans

Ingredients

  • 3-4 Garlic cloves
  • 1 Leek sliced
  • 2 Medium zucchinis sliced
  • Drizzle of olive oil
  • 3 Cups spinach chopped
  • 1 Cup basil
  • 1 Cup coconut milk
  • 1 Cups cooked butter beans
  • Salt & pepper to taste

Instructions

  • Drizzle olive oil into a large skillet over medium high heat. Add garlic and leek. Fry for 2 minutes before adding zucchini and spinach. Fry for a couple of minutes until all the vegetables are cooked.
  • Transfer them into a blender along with basil and coconut milk. Blend until smooth.
  • Pour back into the pan over medium low heat with the beans. Season with salt and pepper to taste.
  • Garnish with a drizzle of coconut milk, lemon juice, and fresh basil.
