High Protein Cheesy Broccoli Tots
Ingredients
- 1 broccoli head appx 300g
- 2 medium Potatoes peeled and diced
- 250 g Firm tofu
- 1 pc Onion finely diced or sub other herbs
- 2 cloves Garlic
- ½ bunch Parsley
- 2½ tbsp Nutritional yeast flakes*Salt
- 1 tsp Pepper or to taste
- 1 tsp salt or to taste
- olive oil for brushing
Spicy Dip
- ½ cup Vegan yogurt
- 1 tbsp Sriracha
Instructions
- Put broccoli and diced potatoes in a heatproof bowl. Pour boiling hot water and let them blanch for 5 minutes, then drain.
- Blitz blanched broccoli, potatoes and all remaining ingredients in a food processor until the mixture forms a paste.
- Roll 2 tablespoons of the mix by hand into nuggets
- Bake or air fry at 200c / 390f for 20-25 minutes until golden
- Serve with the yogurt sriracha dip
