Green Goddess Butter Beans
Ingredients
- 3-4 Garlic cloves
- 1 Leek sliced
- 2 Medium zucchinis sliced
- Drizzle of olive oil
- 3 Cups spinach chopped
- 1 Cup basil
- 1 Cup coconut milk
- 1 Cups cooked butter beans
- Salt & pepper to taste
Instructions
- Drizzle olive oil into a large skillet over medium high heat. Add garlic and leek. Fry for 2 minutes before adding zucchini and spinach. Fry for a couple of minutes until all the vegetables are cooked.
