Dairy-free Chocolate Mousse
Ingredients
- 100 g dark chocolate melted
- 300 g silken tofu
- 1 tbsp smooth peanut butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- small pinch of salt optional
Instructions
- Combine melted dark chocolate, tofu, peanut butter, maple syrup, vanilla and salt in a blender.
- Blend until well combined and smooth and custard-like consistency, around 1 minute.
- Transfer into individual glasses or jars, cover and refrigerate for at least two hours to set. It will turn into mousse like consistency once chilled.
- Chocolate Mousse can be made up to 2 days in advance.
- Optionally, top with whipped vegan cream and fresh berries.
Notes
- Use any sweetener of choice to replace maple syrup.
- Mix in a dash of espresso or chili powder for a bold flavour boost.
- Fresh raspberries or strawberries add a bright, tangy contrast to the rich chocolate.
- Use almond or other nut butter to sub peanut butter.
- Firm tofu won’t give the same smooth texture, so stick to silken tofu.
