Dairy-free Chocolate Mousse

Protein-rich chocolate mousse is healthy and decadent is super easy to whip up and you won’t even know it’s made with silken tofu!

Ingredients

  • 100 g dark chocolate melted
  • 300 g silken tofu
  • 1 tbsp smooth peanut butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • small pinch of salt optional

Instructions

  • Combine melted dark chocolate, tofu, peanut butter, maple syrup, vanilla and salt in a blender.
  • Blend until well combined and smooth and custard-like consistency, around 1 minute.
  • Transfer into individual glasses or jars, cover and refrigerate for at least two hours to set. It will turn into mousse like consistency once chilled.
  • Chocolate Mousse can be made up to 2 days in advance.
  • Optionally, top with whipped vegan cream and fresh berries.

Notes

  1. Use any sweetener of choice to replace maple syrup.
  2. Mix in a dash of espresso or chili powder for a bold flavour boost.
  3. Fresh raspberries or strawberries add a bright, tangy contrast to the rich chocolate.
  4. Use almond or other nut butter to sub peanut butter.
  5. Firm tofu won’t give the same smooth texture, so stick to silken tofu.
