1/2 teaspoon chilli flakes (or hot sauce of choice)
1/2 cup steamed white (or brown) rice
2 tablespoons furikake seasoning, divided
1/2 Persian cucumber, very thinly sliced (either into strips or coins)
1/2 cup, shredded purple cabbage
2 full sheets nori
Squeeze of lemon
salt and pepper to taste
Instructions
In a small bowl mash and combine chickpeas, mayonnaise, furikake and chilli. Season with salt and pepper. Mix together.
Place a sheet of nori on a clean surface.
Using scissors (or a knife) make a single cut in the middle of one side, until you get to the middle of the sheet.
In the bottom left corner, spread half the chickpea mixture in an even layer.
On the top left square of nori spread an even layer of 1/4 cup rice (lightly wetting your hands to make it easier to spread. Sprinkle with 1/2 teaspoon furikake.
On the top right square of nori, line half the cucumbers into a thin, even layer.
On the last square of nori add a layer of half the shredded cabbage.
Starting from the spicy chickpeas, fold the square up, then to the right, then down until you have a neat spicy chickpeas “hand roll” square.
