Zesty Quinoa Salad

Cooked quinoa

Dried black currants

Pitted kalamata olives

Dressing

Extra-virgin olive oil

Instructions
Whisk olive oil, lime juice, wine vinegar, mustard, salt, and cracked pepper together in a small bowl.
Combine quinoa, tomatoes, beans, capsicum, olives, black currants, onions and parsley in a large bowl.
Pour dressing over the salad, toss to coat.
Serve topped with roasted cashews
