Lemon Cashew Energy Balls

Ingredients

cup
Cashews raw and unsalted
½
cup
Desiccated coconut
1
pc Lemon zest finely grated
1
pc Lemon
juice from above lemon
2
tbsp
Rice malt syrup
1/4
tsp
Turmeric for colour
optional
Desiccated coconut extra
for rolling
Instructions
Add all ingredients into a food processor and pulse until come together.
Take 2 tbsp of the coconut mixture and roll mixture into bite sized balls.
Roll balls into more coconut if desired.
Refrigerate for a few hours.
