High Protein Cheesy Broccoli Tots

Ingredients

broccoli head
appx 300g

medium Potatoes
peeled and diced
250
g
Firm tofu

Onion finely diced
or sub other herbs

cloves
Garlic

bunch
Parsley

Nutritional yeast flakes*Salt

olive oil for brushing
Spicy Dip

cup
Vegan yogurt

Sriracha
Instructions
Put broccoli and diced potatoes in a heatproof bowl. Pour boiling hot water and let them blanch for 5 minutes, then drain.
Blitz blanched broccoli, potatoes and all remaining ingredients in a food processor until the mixture forms a paste.
Roll 2 tablespoons of the mix by hand into nuggets
Bake or air fry at 200c / 390f for 20-25 minutes until golden
Serve with the yogurt sriracha dip
