Green Beans with Mediterranean Sauce
Ingredients
500
gm green beans
topped and tailed
Pinch
of soda bicarbonate
SAUCE
1
Onion
1
Red capsicum
1
Pod garlic
1
Punnet cherry tomatoes
200gm
Italian herbs
1/4
cup
Fresh basil leaves
Salt and pepper to taste
EVOO to drizzle
Lime juice to finish
1/4

Toasted almonds to garnish
Instructions
Mediterranean Sauce
Place all veggies in a baking dish.
Sprinkled salt , pepper , Italian herbs.
Drizzle olive oil and bake for 20-30 minutes or until cooked.
Add basil leave and blend to a a chunky or fine consistency.
Pour over balanced beans.
Sprinkle toasted almond flakes.
A bit of lemon squeeze and basil leaves for extra freshness.
Blanched Green Beans
Place beans in a heatproof dish.
Sprinkle a pinch of soda (secret to retain the green colour).
Pour boiling water, let rest for 5-10 minutes depending if you like them crunchy or softer.
