Easy Fondant Potatoes
Ingredients
- 8-10 pieces Small potatoes peeled and halved
- Avocado oil or another high heat oil
- Salt and pepper to taste
- 4-5 sprigs Rosemary and thyme
Instructions
- Place the potatoes in a bowl of cold water and soak for 15 minutes, then pat completely dry.
- Heat avocado oil in a stainless steel or non-stick frying pan over medium-high heat. Reduce heat to medium just before adding in the potatoes.
- Add in the potatoes, flat side down and sear for 3-5 minutes on one side, until golden brown and crispy. Season with salt.
- 4 Flip the potatoes over, add rosemary and thyme sear for another 3-5 minutes with a lid on until golden brown and crispy.
