Zatar Roasted Carrots
Ingredients
- 500 g Carrots peeled & sliced
- 3 tbsp Olive oil
- 1 tbsp Za’atar spice
- 1/4 tsp Cumin500g carrots peeled & sliced
- 3 tbsp Olive oil
- 1 tbsp Za’atar spice
- 1/4 tsp Cumin
Feta Dip
- 1 cup Feta cheese plant-based
- 3 tbsp Yogurt plant-based
- 2 tsp Olive oil
- 1 tbsp Lemon juice
- Pinch Salt & pepper
- 2 tbsp Chopped parsley olive oil, maple syrup
Instructions
- Preheat the oven to 220 D
- Toss the sliced carrots with the olive oil & spices and bake for about 35 minutes, flipping halfway through
- Prep the feta dip by blending the feta, yogurt, olive oil, lemon and a pinch of salt & pepper.
- Spread the dip in a shallow plate or platter then top with the carrots
- Garnish with freshly chopped parsley, toasted pine nuts and a drizzle of maple syrup & olive oil
